I roasted the squash in the oven at 450 for about 30-35 minutes.
In a pan I sautéed onions, peppers, cucumbers, and avocado (cucumbers were random i just didn’t want them to go bad but it was so good, and i love avo with everything)
Once the veg began to cook, I added cooked lentils to the same pot and a jar of pasta sauce.
I then took the squash out of the oven and started to break down the squash with a fork so that it created the ‘noodles’, topped it with the lentils and veg mixture and vegan cheese and popped it back in the oven (broil for the melty effectTaking a photo before I start eating rarely occurs to me . Wanted to share this because it’s GF, Vegan, and very easy to make!
