Vegan Banana Bread

Ingredients:
4 ripe bananas
1/2 cup plant-based milk (such as almond milk or soy milk)
1/4 cup melted coconut oil
1/2 cup coconut sugar or other sweetener of your choice
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
Optional add-ins: chopped nuts, chocolate chips, or dried fruit
Instructions:
Preheat your oven to 350°F (175°C) and grease a loaf pan.
In a large mixing bowl, mash the ripe bananas until smooth.
Add the plant-based milk, melted coconut oil, coconut sugar, and vanilla extract to the mashed bananas. Mix well.
In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
If desired, fold in your chosen add-ins, such as chopped nuts, chocolate chips, or dried fruit.
Pour the batter into the greased loaf pan and smooth the top with a spatula.
Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and let it cool in the pan for 10 minutes, then transfer the banana bread to a wire rack to cool completely before slicing.
