Vegan Chickpea Salad Toast with Smashed Avocado and Romaine Lettuce

Ingredients:
2 slices of Simple Needs bread
1 can of chickpeas, drained and rinsed
2 tablespoons of vegan mayonnaise
1 tablespoon of freshly squeezed lemon juice
1 tablespoon of olive oil
1 clove of garlic, minced
Salt and pepper to taste
1 avocado, mashed
2 leaves of romaine lettuce, chopped
Instructions:
Toast the slices of Simple Needs bread to your desired level of crispiness.
In a medium bowl, add the chickpeas and lightly mash them with a fork or potato masher.
Add the vegan mayonnaise, lemon juice, olive oil, and minced garlic to the chickpeas. Mix well to combine.
Season the chickpea mixture with salt and pepper to taste.
Spread the mashed avocado evenly over each slice of toasted bread.
Spoon the chickpea mixture over the avocado on one of the slices of bread.
Top the chickpea mixture with the chopped romaine lettuce.
Place the other slice of toast on top of the lettuce to make a sandwich.
