Vegan energy balls

Ingredients:
1 cup rolled oats
1/2 cup peanut butter (or any nut butter of your choice)
1/3 cup maple syrup
1/4 cup shredded coconut
1/4 cup ground flaxseed
1/4 cup chocolate chips (optional)
1 tsp vanilla extract
Instructions:
In a large mixing bowl, combine all ingredients and mix well.
Use a small cookie scoop or tablespoon to scoop the mixture and roll it into balls.
Place the balls on a plate or baking sheet lined with parchment paper.
Place the plate or baking sheet in the refrigerator and chill for at least 30 minutes before serving.
Store the energy balls in an airtight container in the refrigerator for up to 1 week
