Vegan Cinnamon Rolls
Ingredients:
For the dough:
- 1 cup unsweetened almond milk (or any plant-based milk of your choice)
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1/4 cup granulated sugar
- 1/3 cup vegan butter, melted
- 3 cups all-purpose flour (plus more for dusting)
- 1/2 teaspoon salt
For the filling:
- 1/3 cup vegan butter, softened
- 1/2 cup packed brown sugar
- 2 tablespoons ground cinnamon
For the icing:
- 1 cup powdered sugar
- 2 tablespoons unsweetened almond milk (or any plant-based milk)
- 1/2 teaspoon vanilla extract
Instructions:
- In a small saucepan, heat the almond milk until warm but not boiling. Transfer to a large mixing bowl and sprinkle the yeast over the warm milk. Let it sit for about 5 minutes until frothy.
- Add the sugar and melted vegan butter to the yeast mixture and stir to combine.
- Gradually add the flour and salt to the mixture, stirring until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth and elastic. If the dough is too sticky, add a little more flour.
- Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
- Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle, about 1/4 inch thick.
- Spread the softened vegan butter evenly over the dough, leaving a small border around the edges. Sprinkle the brown sugar and cinnamon over the butter.
- Starting from one long edge, tightly roll the dough into a log. Slice the log into 12 equal-sized rolls.
- Place the rolls in a greased baking dish, leaving a little space between each roll. Cover the dish with a kitchen towel and let the rolls rise for another 30 minutes.
- Preheat your oven to 350°F (175°C). Once the rolls have risen, bake them in the preheated oven for 25-30 minutes, or until golden brown.
- While the rolls are baking, prepare the icing. In a small bowl, whisk together the powdered sugar, almond milk, and vanilla extract until smooth.
- Once the rolls are done baking, remove them from the oven and let them cool for a few minutes. Drizzle the icing over the warm rolls.
- Serve the vegan cinnamon rolls warm and enjoy!
