- Bell peppers, sliced
- Garlic, minced
👩🍳 Instructions:
- Preheat your oven to 400°F (200°C).
- Coat eggplant slices in vegan flour, then dip in a vegan egg substitute and coat with vegan breadcrumbs.
- Fry the coated eggplant slices until golden brown.
- In a baking dish, layer fried eggplant slices over a bed of sauce, bell peppers, and minced garlic.
- Add a layer of vegan mozzarella cheese, then repeat with another layer of eggplant, peppers, garlic, and cheese.
- Top the final layer with breadcrumbs.
- Bake in the preheated oven for 10-13 minutes or until the cheese is melted and bubbly.
