Vegan Eggplant Delight

Ingredients:

  • 1 large eggplant, cut into thick slices
  • Vegan flour for coating
  • Vegan egg substitute (aquafaba or flax eggs)
  • Vegan breadcrumbs
  • 1 cup vegan mozzarella cheese, shredded
  • Sauce (homemade or store-bought, ensuring it’s vegan)
  • Bell peppers, sliced
  • Garlic, minced

👩‍🍳 Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Coat eggplant slices in vegan flour, then dip in a vegan egg substitute and coat with vegan breadcrumbs.
  3. Fry the coated eggplant slices until golden brown.
  4. In a baking dish, layer fried eggplant slices over a bed of sauce, bell peppers, and minced garlic.
  5. Add a layer of vegan mozzarella cheese, then repeat with another layer of eggplant, peppers, garlic, and cheese.
  6. Top the final layer with breadcrumbs.
  7. Bake in the preheated oven for 10-13 minutes or until the cheese is melted and bubbly.
