Vegan Granola Cups
Ingredients:
For the Granola Cups:
- 2 cups rolled oats (make sure they are certified gluten-free if needed)
- 1/2 cup nuts (almonds, walnuts, or your choice), chopped
- 1/4 cup seeds (such as sunflower seeds or pumpkin seeds)
- 1/4 cup melted coconut oil
- 1/4 cup maple syrup or agave nectar
- 1/2 teaspoon vanilla extract
- A pinch of salt
For the Filling:
- Vegan yogurt of your choice
- Fresh fruits (berries, sliced banana, etc.)
Instructions:
- Preheat the oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper or silicone liners.
- Make the Granola Mixture: In a large mixing bowl, combine the rolled oats, chopped nuts, seeds, melted coconut oil, maple syrup or agave nectar, vanilla extract, and a pinch of salt. Mix well until all the ingredients are evenly coated.
- Form the Cups: Press the granola mixture into the bottom and up the sides of each muffin cup, creating a well in the center to form a cup shape.
- Bake: Bake in the preheated oven for about 15-20 minutes or until the edges turn golden brown. Keep an eye on them to prevent burning.
- Cool: Allow the granola cups to cool completely in the muffin tin before removing them. This will help them firm up.
- Fill the Cups: Once the granola cups are completely cool, carefully remove them from the muffin tin. Spoon vegan yogurt into each cup and top with fresh fruits.
