  • Zest from 2 lemons
  • 1/4 cup maple syrup or agave syrup (adjust for sweetness)
  • 1/4 cup coconut milk (or other plant-based milk)
  • 1/4 cup cornstarch (for thickening)
  • 1/4 tsp turmeric (for color, optional)
  • 1/4 tsp vanilla extract (optional, for extra flavor)
  • Pinch of salt

Instructions:

  1. Prepare the lemon juice and zest: In a medium saucepan, combine the fresh lemon juice and zest. Stir in the maple syrup (or agave syrup) and a pinch of salt.
  2. Make the thickening mixture: In a separate small bowl, whisk together the cornstarch and plant-based milk until smooth. This will be your thickening agent.
  3. Cook the curd: Pour the cornstarch mixture into the saucepan with the lemon juice mixture. Over medium heat, whisk constantly as the mixture heats up. Bring it to a gentle simmer. The curd will begin to thicken after about 3-5 minutes.
  4. Finish it off: Once the curd is thick and glossy, remove it from the heat. Stir in the turmeric (for color), vanilla extract, and any additional sweetness if you’d like. The turmeric is optional but helps give the curd that classic yellow hue.
  5. Cool and store: Transfer the lemon curd into a jar or container and let it cool to room temperature. Once cooled, refrigerate it for at least an hour to let it firm up.
