Vegan Lemon Poppyseed Loaf

Vegan Lemon Poppyseed Loaf
1 ½ c flour
½ c sugar or coconut sugar
2 T poppyseeds
1 t baking powder
½ t baking soda
¼ t salt
Zest of 2 lemons
⅓ c lemon juice (from zested lemons)
½ c unsweetened almond milk
¼ c melted coconut oil
1 t vanilla extract
For glaze
1 c powdered sugar
1 t lemon juice
350 degrees
Grease loaf pan and use parchment paper
Whisk dry ingredients
Add lemon zest and whisk with dey ingredients
Whisk wet ingredients then add to dry until just combined
Pour into loaf pan
Bake 40-45 minutes
Drizzle lemon glaze after cooled for ten minutes
