VEGAN MOIST LEMON BIRTHDAY CAKE

For the Lemon Cake:
2 1/2 cups all-purpose flour
1 1/2 cups granulated sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup unsweetened almond milk (or any plant-based milk of your choice)
1/2 cup vegetable oil (such as canola or melted coconut oil)
1/4 cup fresh lemon juice
Zest of 2 lemons
1 tsp vanilla extract
1 tsp lemon extract (optional, for extra lemon flavor)
For the Lemon Buttercream Frosting:
1 cup vegan butter (room temperature)
4 cups powdered sugar
1/4 cup fresh lemon juice
Zest of 1 lemon
1 tsp vanilla extract
Instructions:
Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, combine the almond milk, vegetable oil, lemon juice, lemon zest, vanilla extract, and lemon extract (if using).
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
Divide the cake batter evenly between the prepared cake pans.
Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
Remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then, remove the cakes from the pans and place them on a wire rack to cool completely.
While the cakes are cooling, prepare the lemon buttercream frosting. In a mixing bowl, beat the vegan butter until creamy.
Gradually add in the powdered sugar, lemon juice, lemon zest, and vanilla extract. Beat until the frosting is smooth and fluffy. If it’s too thick, you can add a bit more lemon juice or a splash of plant-based milk.
Once the cakes are completely cool, spread a layer of lemon buttercream frosting on top of one of the cakes. Place the second cake on top and frost the top and sides of the entire cake with the remaining frosting.
Decorate your cake with additional lemon zest, lemon slices, or edible flowers for a beautiful finishing touch.
