VEGAN OREO CAKE

Ingredients:
For the cake:
2 cups all-purpose flour
1 1/2 cups granulated sugar
3/4 cup cocoa powder
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 3/4 cups almond milk (or any other non-dairy milk)
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
For the frosting:
1/2 cup vegan butter, softened
3 cups powdered sugar
2 teaspoons vanilla extract
2-3 tablespoons almond milk (or any other non-dairy milk)
10-12 vegan Oreo cookies, crushed
For decoration (optional):
Extra vegan Oreo cookies, crushed
Vegan chocolate sauce
Instructions:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
Add the almond milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until the batter is smooth and well combined.
Gradually pour in the boiling water while mixing the batter. The batter will be thin, but that’s okay.
Divide the batter equally between the prepared cake pans. Tap the pans gently on the counter to remove any air bubbles.
Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted into the center comes out clean.
Remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then transfer them to a wire rack to cool completely.
While the cakes are cooling, prepare the frosting. In a mixing bowl, beat the vegan butter until creamy. Gradually add the powdered sugar, vanilla extract, and almond milk. Mix until the frosting is smooth and fluffy.
Once the cakes have cooled, spread a layer of frosting on top of one cake layer. Sprinkle some crushed Oreo cookies on top of the frosting. Place the second cake layer on top.
Use the remaining frosting to cover the top and sides of the cake. Smooth the frosting using a spatula or a cake scraper.
Decorate the cake with additional crushed Oreo cookies on top, and drizzle vegan chocolate sauce if desired.
Refrigerate the cake for about an hour to allow the frosting to set.
