Vegan Peach Cobbler!
Ingredients:
For the filling:
- 4 cups sliced fresh or canned peaches (if using canned, make sure they’re in juice, not syrup)
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
For the topping:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/3 cup vegan butter or coconut oil, melted
- 1/3 cup non-dairy milk (such as almond, soy, or coconut)
Instructions:
- Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish or similar-sized dish.
- In a large mixing bowl, combine the sliced peaches, sugar, cornstarch, vanilla extract, cinnamon, and nutmeg. Stir until the peaches are well coated. Transfer the peach mixture to the prepared baking dish and spread it out evenly.
- In another mixing bowl, whisk together the flour, sugar, baking powder, and salt for the topping.
- Add the melted vegan butter or coconut oil and non-dairy milk to the dry ingredients. Stir until just combined. The mixture will be thick and slightly sticky.
- Drop spoonfuls of the topping mixture over the peaches in the baking dish, spreading it out as evenly as possible. It’s okay if some of the peaches are still peeking through.
- Bake the cobbler in the preheated oven for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.
- Remove the cobbler from the oven and let it cool for a few minutes before serving. Serve warm on its own or with a scoop of vegan vanilla ice cream or whipped coconut cream, if desired.
