VEGAN PICKLED RED ONIONS.

Ingredients:
1 large red onion, thinly sliced
3/4 cup apple cider vinegar
1/4 cup water
2 tablespoons agave syrup or maple syrup
1 tablespoon salt
1/2 teaspoon whole black peppercorns
Optional: 1-2 garlic cloves, thinly sliced
Instructions:
Place the thinly sliced red onion in a clean, sterilized jar or container.
In a small saucepan, combine the apple cider vinegar, water, agave syrup or maple syrup, salt, and whole black peppercorns. If using garlic, add the thinly sliced garlic cloves as well.
Bring the mixture to a boil over medium heat, stirring until the salt has dissolved. Once boiling, remove from heat.
Carefully pour the hot liquid over the sliced red onions in the jar, making sure to cover the onions completely.
Let the mixture cool to room temperature, then cover the jar with a lid or plastic wrap.
Place the jar in the refrigerator and let the pickled red onions marinate for at least 1 hour, but preferably overnight to allow the flavors to meld.
The pickled red onions can be stored in the refrigerator for up to two weeks. Enjoy them as a tangy and flavorful condiment in sandwiches, salads, tacos, or any other dish you like!
