Vegan Pizza muffins recipe
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsweetened almond milk (or any other plant-based milk)
- 1/4 cup olive oil
- 1/4 cup tomato sauce or pizza sauce
- 1/2 cup chopped vegetables (such as bell peppers, onions, mushrooms)
- 1/4 cup sliced black olives
- 1/4 cup vegan cheese, shredded (optional)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
Instructions:
- Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with muffin liners.
- In a large mixing bowl, whisk together the flour, baking powder, salt, oregano, basil, garlic powder, and black pepper.
- In another bowl, mix together the almond milk, olive oil, and tomato sauce until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
- Fold in the chopped vegetables, black olives, and vegan cheese (if using) into the batter.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Remove the muffins from the oven and allow them to cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
- Serve the vegan pizza muffins warm, and enjoy!
