Vegan Pizza Ravioli

Ingredients:
Vegan Pizza Dough
Vegan Mozzarella
Onion
Spinach
Zucchini
Bella Mushrooms
Yellow Peppers
Zesty Sun Ripened Tomato Sauce
Seasonings:
Make it Happen AP
Dried Roasted Minced Garlic
Red Pepper Flakes
Italian Seasoning
Basil
Parsley (for topping)
Instructions:
Prepare the Filling:
Sautee onion, spinach, zucchini, bella mushrooms, and yellow peppers until tender.
Seasoning:
Season the sautéed vegetables with Make it Happen AP, dried roasted minced garlic, red pepper flakes, Italian seasoning, and basil to taste.
Roll Out the Dough:
Roll out the pizza dough into thin sheets.
Assembly:
Place a spoonful of the sautéed vegetable mixture onto one sheet of dough, leaving space between each spoonful.
Top with vegan mozzarella.
Form Ravioli:
Place another sheet of dough over the filling.
Use a ravioli cutter or a knife to cut out individual ravioli.
Seal the edges of each ravioli.
Cooking:
Boil the ravioli in salted water until they float to the surface.
Serve:
Serve the vegan pizza ravioli with zesty sun-ripened tomato sauce.
Top with parsley for garnish.
