Vegan puff pastry

Ingredients:
2 cups all-purpose flour
1 tsp salt
1 cup vegan margarine or vegan butter, chilled and cut into small pieces
1/2 cup ice-cold water
Instructions:
In a large mixing bowl, whisk together the flour and salt.
Add the chilled vegan margarine or butter and use a pastry cutter or your hands to mix it into the flour mixture until it forms pea-sized pieces.
Add the ice-cold water, one tablespoon at a time, and mix until the dough comes together.
Turn the dough out onto a lightly floured surface and knead gently for a few seconds until it forms a smooth ball.
Roll the dough out into a rectangle that’s about 1/4-inch thick.
Fold the top third of the dough down to the center and then fold the bottom third up to the center (like a business letter). This is called a “single turn”.
Rotate the dough 90 degrees and repeat the folding process. This is called a “double turn”.
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes or up to 24 hours before using.
Once chilled, roll the dough out to your desired thickness and use as desired in your recipe.
