VEGAN RAW “NACHOS” WITH WALNUT MEAT

Ingredients: For the walnut meat:
2 cups walnuts
1 tbsp chili powder
1 tsp cumin
1 tsp garlic powder
1 tsp onion powder
1/4 tsp salt
1/4 cup water
For the “nachos”:
2-3 large sweet potatoes, sliced into thin rounds
1/2 red onion, sliced
1 avocado, diced
1/4 cup chopped cilantro
Juice of 1 lime
Salt and pepper to taste
Instructions:
Preheat the oven to 375°F.
In a food processor, pulse the walnuts until they are crumbled.
Add the chili powder, cumin, garlic powder, onion powder, and salt to the food processor and pulse a few more times.
Add the water and pulse until well combined and the mixture resembles meat.
On a baking sheet, arrange the sweet potato rounds in a single layer.
Top the sweet potatoes with the walnut meat and sliced onions.
Bake in the preheated oven for 20-25 minutes or until the sweet potatoes are cooked through.
Remove from the oven and top with diced avocado, cilantro, lime juice, salt, and pepper.
