Vegan salad on toasted bread

Ingredients:
4 slices of bread (make sure they are vegan)
2 cups mixed greens
1/2 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/4 cup sliced black olives
1/4 cup chopped walnuts
2 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
1 garlic clove, minced
1/4 cup olive oil
Salt and pepper to taste
Instructions:
Preheat your oven to 375°F.
Place the bread slices on a baking sheet and toast them in the oven for about 10 minutes, until they are golden brown.
In a large bowl, toss together the mixed greens, cherry tomatoes, red onion, black olives, and chopped walnuts.
In a small bowl, whisk together the balsamic vinegar, Dijon mustard, garlic, and olive oil. Season with salt and pepper to taste.
Drizzle the dressing over the salad and toss to coat.
Divide the salad evenly among the toasted bread slices.
Serve and enjoy!
