Ingredients:
4 cups of lettuce, chopped
1/2 cup of guacamole
1 cup of firm tofu, diced
1 cup of micro greens
1/2 cup of cherry tomatoes, halved
Salt and pepper to taste
Instructions:
Rinse and chop the lettuce, then place it in a large salad bowl.
Add the guacamole to the bowl, and toss the lettuce until it is evenly coated.
Add the diced tofu to the bowl, and mix well.
Sprinkle the micro greens and cherry tomatoes over the top of the salad.
Season with salt and pepper to taste.
Toss the salad gently to mix all the ingredients together.
Serve immediately and enjoy your delicious and healthy vegan salad
