Ingredients:
For the vegan Soy Chorizo:
1 package (12 oz) soy chorizo
1 tbsp olive oil
For the Red Sauce:
2 large tomatoes, diced
1/2 small onion, diced
2 garlic cloves, minced
1 tbsp olive oil
Salt and pepper, to taste
For the Tacos:
8 small corn tortillas
1 avocado, sliced
Fresh cilantro, chopped
Lime wedges
Instructions:
In a large skillet over medium-high heat, add 1 tbsp olive oil and crumble the soy chorizo. Cook, stirring occasionally, for 5-7 minutes until the chorizo is crispy and browned. Set aside.
In a separate skillet over medium-high heat, add 1 tbsp olive oil, onion, garlic, and tomatoes. Cook, stirring occasionally, until the tomatoes have broken down and the mixture has thickened into a sauce. Season with salt and pepper to taste.
Warm the corn tortillas in a dry skillet over medium-high heat until they are pliable and slightly browned.
Assemble the tacos by adding a spoonful of the soy chorizo onto each tortilla, followed by a spoonful of the red sauce. Top with sliced avocado, chopped cilantro, and a squeeze of lime juice.
