vegan street tacos

Ingredients:
8 small corn tortillas
1 can of black beans, drained and rinsed
1 avocado, diced
1/4 cup of diced red onion
1/4 cup of chopped fresh cilantro
1 lime, cut into wedges
Salt and pepper to taste
Optional toppings: hot sauce, salsa, diced tomatoes
Instructions:
Heat the tortillas in a pan or on a griddle over medium heat for about 30 seconds on each side until they are lightly toasted.
In a separate pan, heat the black beans over medium heat until they are heated through.
Divide the black beans evenly among the tortillas.
Top each taco with diced avocado, red onion, and cilantro.
Squeeze a lime wedge over each taco and season with salt and pepper to taste.
Serve with optional toppings such as hot sauce, salsa, or diced tomatoes.
