Vegan Subway-Inspired Wrap

Vegan Subway-Inspired Wrap:
Ingredients:
For the wrap:
1 large tortilla or wrap (make sure it’s vegan)
Hummus or vegan mayo (for spreading)
For the filling (adjust quantities to your liking):
1 cup shredded lettuce
1/2 cup sliced tomatoes
1/2 cup cucumber, thinly sliced
1/4 cup red onions, thinly sliced
1/4 cup green bell pepper, thinly sliced
1/4 cup black olives, sliced
1/4 cup pickles, sliced
Protein options (choose one or mix):
1 cup marinated and baked tofu strips
1 cup chickpea salad (mashed chickpeas, vegan mayo, Dijon mustard, salt, and pepper)
1 cup tempeh bacon strips
Extras:
Salt and pepper to taste
Vegan cheese (optional)
Hot sauce or your favorite vegan dressing
Instructions:
Lay the tortilla on a clean surface.
Spread a layer of hummus or vegan mayo over the entire surface of the tortilla.
Place the shredded lettuce in the center of the tortilla, leaving some space around the edges.
Layer the tomatoes, cucumber, red onions, green bell pepper, black olives, and pickles on top of the lettuce.
Add your chosen protein option or a combination of proteins.
If you like, sprinkle some vegan cheese over the ingredients.
Season with salt and pepper to taste.
Drizzle with hot sauce or your favorite vegan dressing for added flavor.
Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to create a wrap.
Slice the wrap in half diagonally, if desired.
