VEGAN SWEET POTATO AND BLACK BEAN

Ingredients:
1 large sweet potato, peeled and diced
1 can black beans, rinsed and drained
1/2 red onion, chopped
1 bell pepper, chopped
1/2 tsp chili powder
1/2 tsp cumin
Salt and pepper to taste
Olive oil
2 cups cooked quinoa
1 avocado, sliced
Cilantro for garnish
Lime wedges for serving
Directions:
Preheat oven to 400°F. Line a baking sheet with parchment paper.
In a large bowl, toss sweet potato, red onion, and bell pepper with chili powder, cumin, salt, pepper, and a drizzle of olive oil.
Spread mixture evenly on the baking sheet and roast for 20-25 minutes, until the sweet potato is tender and slightly browned.
In a medium saucepan, heat black beans over medium-low heat until heated through.
Divide quinoa between two bowls. Top with roasted sweet potato mixture, black beans, sliced avocado, and cilantro.
Serve with lime wedges for squeezing over the top.
