Vegan Tofu Quiches

Ingredients:
1 block firm tofu
1/4 cup nutritional yeast
1 tablespoon cornstarch
1 tablespoon olive oil
1/4 teaspoon turmeric
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
1/4 cup chopped vegetables of your choice (such as bell pepper, onion, or spinach)
1 pre-made pie crust, cut into circles to fit your muffin tin
Instructions:
Preheat your oven to 350°F (175°C) and grease a muffin tin.
In a food processor or blender, blend the tofu, nutritional yeast, cornstarch, olive oil, turmeric, garlic powder, onion powder, salt, and pepper until smooth.
Transfer the tofu mixture to a mixing bowl and stir in the chopped vegetables.
Roll out the pie crust and cut it into circles to fit your muffin tin. Gently press the crust into the muffin cups.
Pour the tofu mixture into each cup, filling them about 3/4 of the way.
Bake for 25-30 minutes, or until the crust is golden brown and the filling is set.
Let cool for a few minutes before removing the quiches from the muffin tin. Serve warm or at room temperature.
