vegan tortilla soup

Ingredients

– 1 can (15oz) of Pinto Beans drained and rinsed
– 1 can (15oz) of Black Beans, drained and rinsed
– 1 can (15oz) of Corn, drained
– 1 can of Chipotle Rotel
– 1 Packet of Taco Bell Taco Seasoning
– 1 White Onion, chopped
– 1 bushel of Cilantro, chopped
– 1 carton of Vegetable Broth
– 2 tablespoons of Minced Garlic
– 1 tablespoon of Chili Powder
– 1/2 tablespoon of Paprika
– 1/2 tablespoon of Garlic Powder
– 1 & 1/2 tablespoons of Salt
– 1 & 1/2 tablespoons of Pepper
Put all in one large pot, broth last, on medium/high heat covered stirring occasionally til boiling. Reduce to low/medium heat after 10 minutes stirring occasionally. Continue to cook on low boil for 35 minutes stirring often.
-Makes 3-4 servings!-
Best severed with tortilla chips on the side.
