Vegan Tuna Sandwich

Ingredients:
1 can of chickpeas, drained and rinsed
1/4 cup vegan mayonnaise
1 tablespoon Dijon mustard
1/4 cup diced celery
1/4 cup diced red onion
2 tablespoons chopped fresh parsley
1 tablespoon lemon juice
Salt and pepper to taste
Bread of your choice
Optional toppings: lettuce, tomato, avocado
Instructions:
Mash the chickpeas with a fork or pulse in a food processor until they are flaked, but not pureed.
In a mixing bowl, add the mashed chickpeas, vegan mayonnaise, Dijon mustard, celery, red onion, parsley, lemon juice, salt and pepper. Mix well.
Toast your bread if desired. Spread the chickpea mixture on one slice of bread, and add any desired toppings such as lettuce, tomato, and avocado.
Top with the other slice of bread and serve immediately.
