Ingredients:
1 block of firm tofu (pressed and drained)
1 large zucchini, grated
1/2 cup gluten-free breadcrumbs
1/4 cup nutritional yeast
2 tablespoons ground flaxseed
1 tablespoon dried basil
1 teaspoon garlic powder
Salt and pepper to taste
Olive oil for brushing
Instructions:
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a mixing bowl, crumble the tofu and add the grated zucchini, breadcrumbs, nutritional yeast, ground flaxseed, basil, garlic powder, salt, and pepper. Mix well until the mixture is evenly combined.
Roll the mixture into balls, using about 1-2 tablespoons of mixture per ball.
Brush the balls lightly with olive oil and place them on the prepared baking sheet.
Bake for 20-25 minutes, or until golden brown and crispy on the outside.
Serve with your favorite sauce or use them as a topping for salads, pizzas, or sandwiches.
