Veggie soup

2 – 32oz boxes of veggie broth
3 cloves of minced garlic
1 yellow onion chopped
2 tbsp organic xtra virgin olive oil
3 stalks of celery chopped
1 small bag organic sliced carrots
1 small bag of organic corn
1 – 14oz can diced tomatoes
10 grape tomatoes halved
2 potatoes cubed
1 cup of bob’s red mill vegi soup mix
3 bay leaves
Salt, pepper, thyme, rosemary, parsley, oregano, all to taste with a big pinch of sugar
Simmer garlic, onion, celery, and carrots in olive oil until it starts to soften, add about 2 cups of broth, all tomatoes and potatoes and bring to rapid boil for about 5 min, add the rest of the broth and ingredients & lower heat to low boil for about 45 min or so. Of course you can substitute whatever you want.
