Ingredients:

  • 1 cup diced lean ham (approximately 4 ounces)
  • 1 cup reduced-fat shredded cheddar cheese
  • 1/2 cup reduced-fat cream cheese, softened
  • 1/4 cup light mayonnaise
  • 1/4 cup chopped green onions
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • Cooking spray

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the softened cream cheese, mayonnaise, chopped green onions, garlic powder, onion powder, and black pepper. Mix well until all ingredients are thoroughly combined.
  3. Add the diced ham and shredded cheddar cheese to the mixture. Stir until the cheese and ham are evenly distributed throughout the mixture.
  4. Lightly coat a mini muffin tin with cooking spray to prevent sticking.
  5. Using a spoon or a small cookie scoop, fill each muffin cup with the ham and cheese mixture, pressing it down slightly to pack it into the cups.
  6. Bake in the preheated oven for approximately 15-20 minutes or until the bites are golden brown and the cheese is melted and bubbly.
  7. Allow the Ham and Cheese Bites to cool for a few minutes before removing them from the muffin tin.
