Weight Watchers Cheesecake

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs (about 12 sheets)
  • 3 tablespoons granulated sugar
  • 1/4 cup unsalted butter, melted

For the Filling:

  • 16 oz (2 packages) reduced-fat cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup non-fat Greek yogurt
  • 2 tablespoons all-purpose flour

For the Topping (Optional):

  • Fresh berries or a sugar-free fruit sauce (for a lower-point option)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 325°F (160°C).
  2. Prepare the Crust:
    • In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are well-coated.
    • Press the mixture firmly into the bottom of a 9-inch springform pan. Use the back of a spoon to make it even.
  3. Bake the Crust:
    • Place the pan in the preheated oven and bake for about 10 minutes, or until the crust is set. Remove from the oven and let it cool.
  4. Lower Oven Temperature:
    • Reduce the oven temperature to 300°F (150°C).
  5. Prepare the Filling:
    • In a large mixing bowl, beat the softened cream cheese until smooth.
    • Add the sugar and vanilla extract, and continue to beat until well combined.
    • Add the eggs one at a time, mixing well after each addition.
    • Stir in the Greek yogurt and flour until just combined.
  6. Bake the Cheesecake:
    • Pour the filling over the cooled crust. Smooth the top with a spatula.
    • Place the cheesecake in the oven and bake for about 45-50 minutes, or until the edges are set and the center is slightly jiggly.
  7. Cool and Chill:
    • Allow the cheesecake to cool in the oven with the door ajar for about 1 hour. Then, refrigerate for at least 4 hours or overnight.
  8. Optional: Add Topping:
    • Before serving, you can top the cheesecake with fresh berries or a sugar-free fruit sauce for extra flavor and presentation.
  9. Slice and Serve:
    • Carefully remove the cheesecake from the springform pan. Slice and serve.
