Weight Watchers Creamy Pasta with Asparagus and Bacon

Ingredients:

  • 8 oz whole wheat or multigrain pasta
  • 1 bunch asparagus, trimmed and cut into bite-sized pieces
  • 4 slices lean turkey bacon, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup fat-free Greek yogurt
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook Pasta:
    • Cook the pasta according to package instructions. Drain and set aside.
  2. Cook Bacon and Asparagus:
    • In a large skillet, heat olive oil over medium heat. Add chopped turkey bacon and cook until crispy. Remove some of the bacon bits for garnish.
    • Add minced garlic and asparagus to the skillet. Cook for 3-5 minutes or until the asparagus is tender-crisp.
  3. Prepare Sauce:
    • In a bowl, mix fat-free Greek yogurt and grated Parmesan cheese. Season with salt and black pepper.
  4. Combine Ingredients:
    • Add the cooked pasta and cherry tomatoes to the skillet with bacon and asparagus.
    • Pour the Greek yogurt and Parmesan mixture over the pasta and toss to coat evenly. Cook for an additional 2-3 minutes until everything is heated through.
  5. Garnish and Serve:
    • Garnish with the reserved bacon bits and chopped fresh parsley.
    • Adjust seasoning if needed and serve immediately.
