Weight Watchers English Muffin Pizzas

Ingredients:

  • 2 whole wheat English muffins, split in half
  • ½ cup pizza sauce (choose a low-sugar variety)
  • 1 cup shredded part-skim mozzarella cheese
  • Optional toppings: sliced pepperoni, sautéed vegetables, olives, or any of your favorite pizza toppings

Instructions:

  1. Preheat the Oven: Set your oven to 400°F (200°C).
  2. Toast the Muffins: Place the English muffin halves, cut side up, on a baking sheet. Toast them in the preheated oven for about 4 minutes, or until they’re lightly golden.
  3. Add Sauce: Spread approximately 2 tablespoons of pizza sauce on each toasted muffin half.
  4. Add Toppings: Sprinkle shredded mozzarella cheese evenly over the sauce. Add any additional toppings you prefer.
  5. Bake: Return the pizzas to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  6. Serve: Allow the pizzas to cool slightly before serving.
