Weight Watchers Lasagna Recipe

Ingredients:

  • 1 lb lean ground turkey or lean ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, grated
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14 oz) diced tomatoes (optional: with Italian herbs)
  • 1 can (6 oz) tomato paste
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 9 whole wheat lasagna noodles, cooked according to package instructions
  • 1 1/2 cups part-skim ricotta cheese
  • 1 1/2 cups part-skim mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare Sauce:
    • In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until softened.
    • Add ground turkey or beef and cook until browned.
    • Stir in bell pepper, grated zucchini, crushed tomatoes, diced tomatoes, tomato paste, oregano, basil, salt, and pepper. Simmer for about 15-20 minutes, allowing the flavors to meld.
  3. Assemble Layers:
    • In a baking dish, spread a thin layer of the sauce.
    • Place a layer of cooked lasagna noodles on top of the sauce.
    • Spread half of the ricotta cheese over the noodles, followed by a third of the mozzarella cheese and a third of the Parmesan cheese.
    • Repeat the layers, finishing with a layer of sauce and the remaining mozzarella and Parmesan cheeses on top.
  4. Bake:
    • Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes.
    • Uncover and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  5. Rest and Serve:
    • Allow the lasagna to rest for about 10 minutes before slicing.
    • Garnish with fresh basil or parsley if desired.
