Weight Watchers Strawberry and cottage cheese muffins – 1 point

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/4 cup granulated sugar or sugar substitute
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup low-fat cottage cheese
  • 1/4 cup unsweetened applesauce
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, diced

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or coat with non-stick cooking spray.
  2. In a large bowl, whisk together the flour, oats, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix together the cottage cheese, applesauce, egg, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in the diced strawberries.
  6. Divide the batter evenly among the muffin cups.
  7. Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
