Ingredients:
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/4 cup granulated sugar or sugar substitute
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup low-fat cottage cheese
- 1/4 cup unsweetened applesauce
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, diced
Instructions:
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or coat with non-stick cooking spray.
- In a large bowl, whisk together the flour, oats, sugar, baking powder, baking soda, and salt.
- In another bowl, mix together the cottage cheese, applesauce, egg, and vanilla extract until well combined.
- Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
- Gently fold in the diced strawberries.
- Divide the batter evenly among the muffin cups.
- Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
