Weight Watchers Taco Pizza

Ingredients:

For the Pizza Crust:

  • 1 package (about 2 1/4 teaspoons) active dry yeast
  • 1 teaspoon sugar
  • 3/4 cup warm water (110°F/43°C)
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon olive oil

For the Taco Pizza Toppings:

  • 1/2 pound lean ground turkey or chicken
  • 1 packet taco seasoning (choose a reduced-sodium option)
  • 1/2 cup black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1/2 cup shredded reduced-fat cheddar cheese
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • Salsa and non-fat Greek yogurt or light sour cream for serving

Instructions:

For the Pizza Crust:

  1. Activate Yeast:
    • In a small bowl, combine the warm water, sugar, and yeast. Allow it to sit for about 5-10 minutes, or until the mixture becomes frothy.
  2. Prepare Dough:
    • In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the activated yeast mixture. Add the olive oil. Mix until the dough comes together.
  3. Knead and Rise:
    • Turn the dough out onto a floured surface and knead for about 5 minutes until smooth. Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour or until it doubles in size.
  4. Preheat Oven:
    • Preheat your oven to 425°F (220°C).
  5. Roll Out Dough:
    • Roll out the dough on a floured surface to your desired pizza crust thickness. Transfer it to a pizza stone or a baking sheet.
  6. Pre-Bake:
    • Pre-bake the crust for about 5-7 minutes until it just starts to set.

For the Taco Pizza Toppings:

  1. Cook Ground Turkey:
    • In a skillet over medium heat, cook the ground turkey until browned. Drain any excess fat. Add the taco seasoning and cook according to package instructions.
  2. Assemble Pizza:
    • Spread the seasoned ground turkey over the pre-baked pizza crust. Sprinkle black beans, diced tomatoes, shredded lettuce, shredded cheese, and diced red onion evenly over the pizza.
  3. Bake:
    • Bake the pizza in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is melted.
  4. Garnish:
    • Remove the pizza from the oven and sprinkle chopped cilantro over the top.
  5. Serve:
    • Slice the taco pizza and serve with salsa and non-fat Greek yogurt or light sour cream on the side.
