Ingredients:

  • 6 hard-boiled eggs, peeled and chopped

  • 1 tablespoon Dijon mustard

  • 1/4 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • Salt and pepper to taste
  • Fresh chives or parsley for garnish (optional)

Instructions:

  1. Prepare Hard-Boiled Eggs:
    • Hard boil the eggs and let them cool before peeling and chopping.
  2. Mix Dressing:
    • In a bowl, combine fat-free Greek yogurt, Dijon mustard, and red wine vinegar. Mix well until smooth.
  3. Combine Ingredients:
    • In a larger mixing bowl, combine the chopped hard-boiled eggs, celery, and red onion.
  4. Add Dressing:
