WW turkey meatloaf

Ingredients:

For the Meatloaf:
  • 1.5 pounds lean ground turkey
  • 1 cup breadcrumbs (whole wheat or panko)
  • 1/2 cup finely diced onion
  • 1/2 cup finely diced bell pepper (any color)
  • 1/2 cup grated carrots
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 large eggs
  • 1 cup tomato sauce (divided)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Glaze:
  • 1/4 cup ketchup
  • 1 tablespoon brown sugar (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or foil.
  2. In a large bowl, combine ground turkey, breadcrumbs, diced onion, diced bell pepper, grated carrots, minced garlic, chopped parsley, eggs, 1/2 cup tomato sauce, Worcestershire sauce, thyme, oregano, salt, and pepper. Mix until well combined.
  3. Shape the mixture into a loaf shape and place it on the prepared baking sheet.
  4. In a small bowl, mix together the remaining 1/2 cup of tomato sauce and ketchup. If you prefer a sweeter glaze, add the optional brown sugar to the mixture.
  5. Spread the glaze evenly over the top of the meatloaf.
  6. Bake in the preheated oven for approximately 1 hour or until the internal temperature reaches 165°F (74°C).
  7. Allow the meatloaf to rest for a few minutes before slicing.
  8. Serve slices of the Weight Watchers turkey meatloaf with your favorite side dishes.
