Zero Point Old Fashioned Pancakes

Ingredients:

  • 1 cup old-fashioned oats (blended into a flour-like consistency)
  • 1 ripe banana, mashed
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Cooking spray (for greasing the pan)

Instructions:

  1. In a blender or food processor, pulse the old-fashioned oats until they have a flour-like consistency.
  2. In a mixing bowl, combine the blended oats, mashed banana, eggs, baking powder, vanilla extract, and a pinch of salt. Mix until well combined.
  3. Let the batter rest for a few minutes to allow the oats to absorb some moisture and thicken.
  4. Preheat a non-stick skillet or griddle over medium heat. Lightly coat it with cooking spray.
  5. Pour 1/4 cup portions of the batter onto the skillet to form pancakes.
  6. Cook until bubbles form on the surface of the pancakes, then flip and cook the other side until golden brown.
  7. Continue the process until all the batter is used.
  8. Serve the pancakes with your favorite toppings, such as fresh fruit, a dollop of Greek yogurt, or a drizzle of sugar-free syrup.
