Zero Point Weight Watchers Banana Soufflé

Ingredients:

  • 2 ripe bananas, mashed
  • 2 egg whites
  • 1/4 cup unsweetened applesauce
  • 1/2 teaspoon vanilla extract
  • 1/4 cup granulated sweetener (such as Stevia or monk fruit)
  • 1/4 cup oat flour (you can make this by blending rolled oats)
  • 1/2 teaspoon baking powder
  • A pinch of salt

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the mashed bananas, unsweetened applesauce, and vanilla extract.
  3. In a separate bowl, beat the egg whites until stiff peaks form.
  4. Gently fold the beaten egg whites into the banana mixture.
  5. In another bowl, mix together the granulated sweetener, oat flour, baking powder, and a pinch of salt.
  6. Gradually add the dry ingredients to the banana and egg white mixture, folding gently until well combined.
  7. Spray ramekins or baking dishes with non-stick cooking spray.
  8. Divide the soufflé mixture among the ramekins.
  9. Bake in the preheated oven for about 20-25 minutes or until the soufflés are puffed up and lightly browned on top.
  10. Remove from the oven and serve immediately.
