- 2 ripe bananas, mashed
- 2 egg whites
- 1/4 cup unsweetened applesauce
- 1/2 teaspoon vanilla extract
- 1/4 cup granulated sweetener (such as Stevia or monk fruit)
- 1/4 cup oat flour (you can make this by blending rolled oats)
- 1/2 teaspoon baking powder
- A pinch of salt
Instructions:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the mashed bananas, unsweetened applesauce, and vanilla extract.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Gently fold the beaten egg whites into the banana mixture.
- In another bowl, mix together the granulated sweetener, oat flour, baking powder, and a pinch of salt.
- Gradually add the dry ingredients to the banana and egg white mixture, folding gently until well combined.
- Spray ramekins or baking dishes with non-stick cooking spray.
- Divide the soufflé mixture among the ramekins.
- Bake in the preheated oven for about 20-25 minutes or until the soufflés are puffed up and lightly browned on top.
- Remove from the oven and serve immediately.
