Ingredients:
- Fat-free or low-fat cream cheese
- Non-fat Greek yogurt
- Sugar substitute or a small amount of honey or maple syrup
- Egg whites or a lower-calorie egg substitute
- Graham cracker crumbs (for the crust, use a smaller amount for fewer points)
- Vanilla extract
- Lemon zest (for flavor)
- Fresh fruit (for topping)
Instructions:
- Preheat your oven according to the cheesecake recipe you’re following.
- In a mixing bowl, combine the fat-free or low-fat cream cheese, non-fat Greek yogurt, sugar substitute or sweetener, and a splash of vanilla extract. Adjust the sweetness to your taste.
- Add in egg whites or an egg substitute, and mix until the batter is smooth and well combined. Be mindful of portion sizes to keep the points lower.
- If you choose to use a crust, press a thin layer of graham cracker crumbs into the bottom of a pie or cheesecake pan.
- Pour the cream cheese mixture over the crust (if used) and smooth it out.
- Bake the cheesecake in the preheated oven according to the recipe’s instructions until it’s set and slightly golden on top.
- Let the cheesecake cool, and then refrigerate it until it’s thoroughly chilled.
- Top the cheesecake with fresh fruit or other low-point toppings, if desired.
