Instructions:
- Wash and scrub the potatoes thoroughly. You can leave the skin on for added texture and flavor.
- Cut the potatoes into bite-sized cubes or wedges, about 1 inch in size. Try to make them as uniform as possible to ensure even cooking.
- In a large bowl, toss the potato pieces with olive oil, salt, pepper, garlic powder, and paprika until they’re well coated.
- Preheat your air fryer to 375°F (190°C).
- Place the seasoned potato cubes in the air fryer basket in a single layer. Don’t overcrowd the basket; you may need to cook them in batches.
- Cook the potatoes in the air fryer for about 20-25 minutes, shaking or flipping them halfway through the cooking time. They should be golden and crispy on the outside and tender on the inside.
- While the potatoes are cooking, prepare your toppings: shred the cheese, crumble the bacon, chop the green onions, and have sour cream ready.
- Once the potato bites are done, remove them from the air fryer.
- While they are still hot, sprinkle the shredded cheddar cheese on top and let it melt from the residual heat.
