Air fryer Loaded Potato Bites

Ingredients:

  • 4 medium-sized russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 cup shredded cheddar cheese
  • 1/4 cup cooked and crumbled bacon
  • 1/4 cup sour cream
  • 2-3 green onions, chopped

Instructions:

  1. Wash and scrub the potatoes thoroughly. You can leave the skin on for added texture and flavor.
  2. Cut the potatoes into bite-sized cubes or wedges, about 1 inch in size. Try to make them as uniform as possible to ensure even cooking.
  3. In a large bowl, toss the potato pieces with olive oil, salt, pepper, garlic powder, and paprika until they’re well coated.
  4. Preheat your air fryer to 375°F (190°C).
  5. Place the seasoned potato cubes in the air fryer basket in a single layer. Don’t overcrowd the basket; you may need to cook them in batches.
  6. Cook the potatoes in the air fryer for about 20-25 minutes, shaking or flipping them halfway through the cooking time. They should be golden and crispy on the outside and tender on the inside.
  7. While the potatoes are cooking, prepare your toppings: shred the cheese, crumble the bacon, chop the green onions, and have sour cream ready.
  8. Once the potato bites are done, remove them from the air fryer.
  9. While they are still hot, sprinkle the shredded cheddar cheese on top and let it melt from the residual heat.
  10. Then, add crumbled bacon, a dollop of sour cream, and a sprinkle of chopped green onions.
  11. Serve immediately, and enjoy your air fryer loaded potato bites!
