Beef Enchilada Roll-Ups

3 lb beef roast, cooked and shredded
3/4 cup enchilada sauce
2 @CutDaCarb flatbread
1/2 cup sour cream
2 cups shredded cheddar
🔥 Spread 1/4 cup sour cream on each flatbread, leaving a 2 inch gap on the long side
🔥 Mix together shredded beef and enchilada sauce. Spread on top of sour cream and sprinkle with cheese
🔥 Roll up flatbread along the long side. Cover log tightly in clear wrap and refrigerate 24 hours
🔥 Remove clear wrap and slice into 1/2 inch coins. Place on a parchment covered baking sheet and place in oven at 375° for 20 minutes
I served mine with sour cream and fresh guac 🥑 These roll-ups can be eaten hot or cold & made with any ingredients you have on hand! (Combinations I love 》chicken cordon bleu, italian deli meat & cream cheese, pizza, cheeseburger)
