4 oz Mozzarella Cheese
Pepperoni Slices
1 teaspoon Garlic Powder*
2 teaspoon Oregano*
1/2 teaspoon Onion Powder*
*Note: Strictly speaking, garlic powder, oregano, and onion powder aren’t part of the carnivore diet. But for this recipe, I’m only using a tiny bit. If you’re not sticking to a super strict carnivore diet, it shouldn’t be an issue, just don’t go making this every single day.

Step 1
Preheat your oven to 400°F (200°C) and spray a muffin tray with cooking oil. Alternatively, you can grease the tray with melted butter.
Step 2
In a large mixing bowl, combine the whole egg and egg whites. Beat the eggs together using a whisk until well-combined.
Step 3
Add the spices to the egg mixture and whisk until evenly distributed.
Step 4
Carefully pour the egg mixture into the prepared muffin tins, filling each cup about 3/4 full. Sprinkle shredded cheese on top of each muffin, and then place a pepperoni slice on top of the cheese for each muffin.
Step 5
Bake the muffins in the preheated oven for 13-15 minutes, or until the egg muffins are fully cooked in the center and the tops have turned golden brown.
Remove the muffin tray from the oven and let the muffins cool for a few minutes before removing them from the tray. Serve the muffins warm and enjoy your delicious carniore breakfast or snack!

1. Grease the Muffin Tray Generously
To ensure that your muffins release easily from the tray and maintain their shape, it’s important to grease the muffin tray generously. You can use cooking oil spray or melted butter to coat each muffin cup thoroughly.
Make sure to cover the bottom and sides of each cup to prevent sticking. If you’re using a silicone muffin tray, you may not need to grease it as heavily, but a light coating of oil or butter can still help with easy removal.
Let the Muffins Cool Slightly Before Removing
Once your carnivore pizza muffins are done baking, it’s tempting to dive right in and start enjoying them. However, it’s important to let the muffins cool slightly in the tray before attempting to remove them. This cooling period allows the muffins to set and firm up, making them easier to handle without falling apart.
After removing the tray from the oven, let the muffins cool for about 5 minutes. Then, using a butter knife or a small offset spatula, gently loosen the edges of each muffin from the tray.
