Ingredients:
For the Lasagna Rolls:
- 8 lasagna noodles (whole wheat or regular)
- 2 cups shredded cooked chicken breast
- 1 cup part-skim ricotta cheese
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach leaves, chopped
- 1 cup part-skim mozzarella cheese, shredded
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
For the Alfredo Sauce:
- 2 tablespoons light butter or margarine
- 2 tablespoons all-purpose flour
- 1 1/2 cups skim milk
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions:
- Preheat your oven to 350°F (175°C).
- Cook the lasagna noodles according to the package instructions, but slightly undercook them, as they will continue cooking in the oven. Drain and set aside.
- In a medium saucepan, melt the light butter over medium heat. Stir in the flour and cook for about 1-2 minutes to create a roux.
- Gradually whisk in the skim milk to the roux, making sure there are no lumps. Cook and stir until the sauce thickens, which should take about 5-7 minutes.
- Remove the saucepan from the heat, and stir in the grated Parmesan cheese and garlic powder. Season with salt and pepper to taste. Set the Alfredo sauce aside.
- In a separate bowl, combine the shredded chicken, ricotta cheese, grated Parmesan cheese, chopped spinach, and garlic powder. Season with salt and pepper to taste.
- Lay out one cooked lasagna noodle on a clean surface, and spread a portion of the chicken and spinach mixture evenly over the entire length of the noodle.
- Carefully roll up the lasagna noodle, starting from one end, and place it seam-side down in a baking dish.
- Repeat this process with the remaining lasagna noodles.
- Pour the prepared Alfredo sauce over the rolled lasagna noodles in the baking dish.
- Sprinkle the shredded mozzarella cheese over the top.
- Cover the baking dish with foil and bake in the preheated oven for about 20-25 minutes, or until the rolls are heated through and the cheese is melted.
- You can remove the foil during the last few minutes of baking to allow the cheese to brown slightly, if desired.
- Serve your Chicken Alfredo Lasagna Rolls hot, garnished with fresh basil or parsley if you like.
