CHICKEN ALFREDO LASAGNA ROLLS

Ingredients:

For the Lasagna Rolls:

  • 8 lasagna noodles (whole wheat or regular)
  • 2 cups shredded cooked chicken breast
  • 1 cup part-skim ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach leaves, chopped
  • 1 cup part-skim mozzarella cheese, shredded
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

For the Alfredo Sauce:

  • 2 tablespoons light butter or margarine
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups skim milk
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Cook the lasagna noodles according to the package instructions, but slightly undercook them, as they will continue cooking in the oven. Drain and set aside.
  3. In a medium saucepan, melt the light butter over medium heat. Stir in the flour and cook for about 1-2 minutes to create a roux.
  4. Gradually whisk in the skim milk to the roux, making sure there are no lumps. Cook and stir until the sauce thickens, which should take about 5-7 minutes.
  5. Remove the saucepan from the heat, and stir in the grated Parmesan cheese and garlic powder. Season with salt and pepper to taste. Set the Alfredo sauce aside.
  6. In a separate bowl, combine the shredded chicken, ricotta cheese, grated Parmesan cheese, chopped spinach, and garlic powder. Season with salt and pepper to taste.
  7. Lay out one cooked lasagna noodle on a clean surface, and spread a portion of the chicken and spinach mixture evenly over the entire length of the noodle.
  8. Carefully roll up the lasagna noodle, starting from one end, and place it seam-side down in a baking dish.
  9. Repeat this process with the remaining lasagna noodles.
  10. Pour the prepared Alfredo sauce over the rolled lasagna noodles in the baking dish.
  11. Sprinkle the shredded mozzarella cheese over the top.
  12. Cover the baking dish with foil and bake in the preheated oven for about 20-25 minutes, or until the rolls are heated through and the cheese is melted.
  13. You can remove the foil during the last few minutes of baking to allow the cheese to brown slightly, if desired.
  14. Serve your Chicken Alfredo Lasagna Rolls hot, garnished with fresh basil or parsley if you like.
