- 2 cups self-rising flour
- 1/2 cup low-fat shredded cheddar cheese
- 2 cloves garlic, minced
- 1 cup non-fat plain Greek yogurt
- 1/4 cup unsweetened almond milk (or any other low-fat milk)
- 2 tablespoons light butter or margarine (for brushing)
- 1/4 teaspoon garlic powder
- Fresh parsley, chopped (optional, for garnish)
Instructions:
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the self-rising flour, minced garlic, and shredded cheddar cheese.
- Add the non-fat plain Greek yogurt and almond milk to the dry ingredients. Stir until a dough forms. If it’s too dry, you can add a little more milk, but be careful not to make it too sticky.
- Turn the dough out onto a lightly floured surface and knead it a few times until it comes together. Roll or pat it out to about 1/2-inch thickness.
- Use a biscuit cutter or a glass to cut out biscuits from the dough. Place them on the prepared baking sheet.
- Melt the light butter or margarine and stir in the garlic powder.
- Brush the garlic butter mixture over the tops of the biscuits.
- Bake in the preheated oven for about 10-12 minutes or until the biscuits are golden brown and cooked through.
- If desired, sprinkle some chopped fresh parsley over the top for added flavor and color.
