Ingredients:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 2 tbsp psyllium husk powder
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 4 large eggs
  • 1/2 cup unsalted butter, melted (plus extra for greasing)
  • 1/4 cup unsweetened almond milk (or any other keto-friendly milk)
  • 2 tbsp erythritol or sweetener of choice (optional, for a slightly sweet taste)
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract (optional)
  • 1 tsp active dry yeast (optional, for flavor depth, can be omitted for a yeast-free version)

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C). Grease a loaf pan (8×4 inches) with butter or line it with parchment paper.
  2. Combine Dry Ingredients:
    In a large bowl, whisk together the almond flour, coconut flour, psyllium husk powder, baking powder, and salt. If you’re using erythritol, add it in now.
  3. Prepare Wet Ingredients:
    In another bowl, whisk the eggs, melted butter, almond milk, apple cider vinegar, and vanilla extract (if using). If you’re using yeast for extra flavor, you can activate it in warm water (about 1/4 cup) with a pinch of sugar (or a keto-friendly sweetener) for a few minutes, then add it to the wet ingredients.
  4. Combine Wet and Dry Ingredients:
    Add the wet ingredients to the dry ingredients and stir well to combine. The batter should be thick but spoonable. If it’s too thick, add a little more almond milk, one tablespoon at a time.
  5. Transfer to Pan:
    Pour the batter into the prepared loaf pan, smoothing the top with a spatula. If desired, you can brush the top with a little melted butter for extra flavor.
  6. Bake:
    Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  7. Cool:
