- Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix the wet ingredients: In a large mixing bowl, beat the softened butter and granulated erythritol until light and fluffy. Add the egg and vanilla extract, and mix until well combined.
- Combine the dry ingredients: In a separate bowl, whisk together the almond flour, baking powder, and salt.

- Bake: Bake the cookies for 10-12 minutes, or until the edges are golden brown. The cookies will be soft when they come out of the oven but will firm up as they cool.
