Keto Cream Puffs

Ingredients:
For the Choux Pastry:
- 1/2 cup water
- 1/4 cup unsalted butter
- 1/4 tsp salt
- 1/2 cup almond flour
- 2 large eggs
For the Filling:
- 1 cup heavy cream
- 1 tsp vanilla extract
- 2-3 tablespoons powdered erythritol (adjust to taste)
For the Chocolate Glaze (Optional):
- 1/4 cup unsweetened chocolate (or sugar-free chocolate chips)
- 2 tablespoons unsalted butter
- 1-2 tablespoons powdered erythritol (adjust to taste)
Instructions:
For the Choux Pastry:
- Preheat your oven to 375°F (190°C).
- In a saucepan, combine water, butter, and salt. Heat over medium heat until the mixture comes to a boil and the butter is completely melted.
- Remove the saucepan from heat and quickly stir in the almond flour until well combined. Return to low heat and continue to stir for about 1-2 minutes until the mixture forms a smooth ball of dough.
- Transfer the dough to a mixing bowl and let it cool for a few minutes.
- Add the eggs, one at a time, beating well after each addition. The dough should be smooth and glossy.
- Scoop or pipe the dough onto a baking sheet lined with parchment paper. You can use a pastry bag or two spoons to shape them into small mounds, leaving some space between each.
- Bake in the preheated oven for 25-30 minutes, or until the cream puffs are golden brown and have puffed up.
- Remove from the oven and allow them to cool completely.
For the Filling:
- In a mixing bowl, whip the heavy cream, vanilla extract, and powdered erythritol until stiff peaks form.
- Once the cream puffs have cooled, use a knife to make a small slit in the side of each puff.
- Fill a pastry bag with the whipped cream mixture and pipe it into the cream puffs.
For the Chocolate Glaze (Optional):
- In a microwave-safe bowl, melt the unsweetened chocolate and butter in short intervals, stirring until smooth.
- Stir in powdered erythritol to sweeten to your desired level.
- Drizzle the chocolate glaze over the filled cream puffs.
Allow the chocolate to set before serving.
