Keto Stuffed Pepper Casserole

Ingredients:

  • 1 lb ground beef (or ground turkey)
  • 2 cups bell peppers, diced (any colors)
  • 1 small onion, finely chopped
  • 2 cups cauliflower rice
  • 1 can (14 oz) diced tomatoes (no sugar added)
  • 1 cup tomato sauce (sugar-free)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional for spice)
  • Salt and pepper to taste
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil]

 


Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set aside.
  2. Cook the Ground Beef:
    • Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Season with salt and pepper.
    • Remove the beef from the skillet and set aside.

    • In the same skillet, add the diced bell peppers and onion. Cook for 4–5 minutes, until softened.
    • Stir in the garlic powder, smoked paprika, Italian seasoning, and red pepper flakes if using.
  4. Combine Ingredients:
    • Add the browned beef back to the skillet, followed by the diced tomatoes, tomato sauce, and cauliflower rice. Stir well to combine and let it simmer for 5 minutes to allow the flavors to meld.
  5. Assemble the Casserole:
    • Pour the mixture into the prepared baking dish. Spread it out evenly.
    • Sprinkle the shredded mozzarella and Parmesan cheese evenly over the top.
  6. Bake:
    • Place the casserole in the preheated oven and bake for 20–25 minutes, or until the cheese is bubbly and golden brown.
  7. Serve:
    • Remove the casserole from the oven and let it cool for 5 minutes before serving. Garnish with fresh parsley or basil if desired.
