Low-Point Pizza Roll-ups

Low-Point Pizza Roll-ups

Ingredients:

  • 1 large whole wheat or low-point tortilla
  • 1/4 cup part-skim mozzarella cheese, shredded
  • 2 tablespoons pizza sauce (look for a low-point option)
  • Your choice of pizza toppings (e.g., turkey pepperoni, diced bell peppers, mushrooms, etc.)
  • Italian seasoning, dried oregano, or basil (optional, for added flavor)
  • Cooking spray

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare Tortilla:
    • Lay the tortilla flat on a clean surface.
  3. Add Sauce and Cheese:
    • Spread the pizza sauce evenly over the entire surface of the tortilla.
    • Sprinkle the shredded mozzarella cheese evenly over the sauce.
  4. Add Toppings:
    • Add your choice of pizza toppings over the cheese. Be mindful of the quantity to keep the points low.
  5. Roll Up:
    • Starting from one end, carefully roll the tortilla into a log or cylinder.
  6. Slice:
    • Using a sharp knife, slice the rolled-up tortilla into smaller sections, creating individual pizza roll-ups.
  7. Place on Baking Sheet:
    • Place the pizza roll-ups on a baking sheet lined with parchment paper.
  8. Sprinkle Seasoning (Optional):
    • If desired, sprinkle Italian seasoning, dried oregano, or basil over the top for added flavor.
  9. Bake:
    • Bake in the preheated oven for about 10-12 minutes or until the cheese is melted, and the edges are golden brown.
  10. Cool and Serve:
    • Allow the pizza roll-ups to cool for a few minutes before serving. Enjoy them as a snack or pair them with a side salad for a light meal.
